Ingredients

  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 6-8 ripe peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 3 teaspoons all-purpose flour
  • 1/2 cup salted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Method

  1. Prepare crust: Mix flour, sugar, and salt in a bowl. Work cold butter into the mixture until crumb-like. Gradually add ice water (3-4 tablespoons) to form a dough. Chill 30 minutes.
  2. Roll out dough to fit a 9-inch pie dish (bottom and top crusts). Line dish and prick base.
  3. Prepare filling: Combine peaches, sugars, spices, and flour. Spread in the crust-lined dish. Add melted salted butter over the peaches.
  4. Cover with top crust. Crimp edges. Score top crust. Bake at 375°F (190°C) for 45-50 minutes until golden and bubbly. Cool slightly before serving.

Notes

For a low-sugar version, substitute granulated sugar with monk fruit sweetener in a 1:1 ratio. Use cold butter for optimal crust flakiness. Leftovers store in the fridge for up to 3 days.
