Ingredients

  • 12 oz (340g) linguine
  • 4 cloves garlic, minced
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt, to taste

Method

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Sauté garlic for 30-60 seconds until fragrant.
  3. Pour in chicken stock and bring to a boil.
  4. Add salt to taste and add linguine to the pot.
  5. Cook, stirring frequently, until pasta is al dente (7-8 minutes).
  6. Reduce heat to low, stir in heavy cream and grated Parmesan.
  7. Simmer for 1-2 minutes until sauce thickens and pasta is fully cooked.
  8. Remove from heat and adjust seasoning if needed.
  9. Serve immediately.

Notes

Use aged Parmesan for the best flavor.
Break pasta in half if the pot is too narrow.
For a non-dairy version, substitute heavy cream with coconut cream and omit the Parmesan.
