Ingredients

  • 1.5 lbs chicken breast, cut into small cubes
  • 1 tbsp olive oil
  • 1/2 cup buffalo sauce (no alcohol/vinegar-based)
  • 1 head Boston Bibb or Iceberg lettuce
  • 1 avocado, sliced
  • 1/4 cup crumbled blue cheese or feta
  • Salt and black pepper to taste

Method

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the cubed chicken to the skillet and season lightly with salt and pepper.
  3. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
  4. Reduce heat to low and pour the buffalo sauce over the chicken, stirring to coat evenly.
  5. Warm for an additional 1-2 minutes then remove from heat.
  6. Separate and wash lettuce leaves, patting them dry for maximum crunch.
  7. Spoon the buffalo chicken mixture into the center of each lettuce leaf.
  8. Top with avocado slices and a sprinkle of crumbled blue cheese or feta before serving.

Notes

Keep lettuce in the refrigerator until ready to serve to ensure peak crispness. You can substitute blue cheese with feta for a slightly less pungent flavor profile. For extra protein, you can add a dollop of Greek yogurt on top.
