Ingredients

  • 1 pound (450g) extra lean ground beef
  • 1 small red onion (finely grated, ~1/2 cup)
  • 1 cup chopped fresh parsley
  • 1 1/2 tablespoons Seven Spice mix (sumac, cumin, coriander, cinnamon, allspice, cloves, black pepper)
  • 1 teaspoon salt
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons low-carb almond flour
  • Kebab skewers (pre-soaked wooden or stainless steel)

Method

  1. Grate red onion and mix with parsley until finely combined
  2. In a large bowl, combine ground beef, onion-parsley mixture, Seven Spice, salt, and 1 tablespoon olive oil
  3. Chill mixture in the fridge for 20-30 minutes to enhance binding
  4. Insert beef mixture onto skewers, pressing firmly to shape compact kebabs
  5. Lightly coat kebabs with remaining 3 tablespoons olive oil
  6. Grill on high heat (425°F/220°C) for 15-18 minutes, turning occasionally for even char
  7. Alternatively: Preheat oven to 425°F (220°C). Bake skewers on a wire rack for 15-18 minutes, flipping halfway
