Ingredients

  • 1 lb lean ground beef (90/10)
  • 2 cups nacho cheese Doritos, crushed
  • 3 romaine lettuce hearts, chopped
  • 1 cup fire-roasted corn (canned or fresh)
  • 1 cup kidney beans, drained and rinsed
  • 1 medium avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 2 cups shredded cheddar cheese
  • 2 tbsp taco seasoning (pork-free/dairy-free if needed)
  • 1/2 cup sour cream
  • Optional: chopped cilantro for garnish

Method

  1. Brown the ground beef in a skillet over medium-high heat. Drain fat, sprinkle taco seasoning, and mix well.
  2. Break half the Doritos into a large mixing bowl or serving dish to form the base.
  3. Layer romaine hearts, fire-roasted corn, kidney beans, and cherry tomatoes over the seasoned beef.
  4. Top with diced avocado, shredded cheese, and sour cream. Sprinkle remaining whole Doritos and chopped red onion.
  5. Serve immediately, adjusting toppings to taste.

Notes

Use beef or ground chicken for halal compliance. Add extra veggies like black beans or grilled peppers for fiber. Avoid over-crumbling Doritos to preserve crunch. Stores well in an airtight container for up to 2 days.
