Ingredients
Method
- Drain the silken tofu thoroughly and gently pat dry with paper towels to remove excess surface moisture.
- Using a double boiler or a microwave in short bursts, melt the dairy-free chocolate until smooth and glossy; allow to cool slightly.
- Place the drained silken tofu, melted chocolate, maple syrup, cocoa powder, vanilla extract, and salt into a high-speed blender.
- Blend on high until the mixture is completely smooth and no tofu lumps remain.
- Taste and adjust sweetness if desired, blending again briefly to incorporate.
- Pour the mousse into individual serving ramekins or glasses.
- Refrigerate for at least 1 hour to allow the cocoa butter to set for a firm, velvety texture.
Notes
Ensure your silken tofu is very well drained to avoid a watery texture. Use the highest quality dark chocolate you can find, as the flavor profile of the mousse depends entirely on it. Store leftovers in an airtight container in the refrigerator for up to 3 days.
