Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 tablespoons alcohol-free red curry paste
  • 1 medium butternut squash, peeled and cubed
  • 2 large sweet potatoes, peeled and cubed
  • 1 large apple, peeled and diced
  • 4 cups vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Method

  1. Heat olive oil in a large heavy-bottomed pot over medium heat.
  2. Add the onion and sauté until translucent.
  3. Stir in the red curry paste and cook for 1-2 minutes until aromatic.
  4. Add the cubed sweet potatoes, butternut squash, and apples, sautéing for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil, then reduce heat and simmer until vegetables are tender (about 20 minutes).
  6. Use an immersion blender to process the soup until completely smooth and velvety.
  7. Stir in the coconut milk and simmer for an additional 5 minutes to incorporate flavors.
  8. Season with salt, pepper, and cayenne to taste.
  9. Serve warm, topped with fresh cilantro.

Notes

Store in an airtight container in the refrigerator for up to 4 days; the soup thickens upon cooling, so add a splash of water or broth when reheating. Adjust the heat level by adding more cayenne or fresh bird's eye chili carefully. To save time, you can purchase pre-peeled and cubed squash.
