Ingredients

  • 2 pounds ground beef (80% lean)
  • 1 box (6 oz) Stove Top Stuffing mix
  • 1 cup whole milk
  • 2 large eggs, lightly beaten
  • 1 small onion, finely diced
  • 1/4 cup ketchup
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup (for glaze)
  • 1/4 cup brown sugar (for glaze)
  • 1 tablespoon yellow mustard (for glaze)

Equipment

  • 9x5 inch loaf pan For shaping the meatloaf
  • Large mixing bowl
  • Meat thermometer Essential for perfect doneness
  • Measuring cups and spoons
  • Small bowl For mixing the glaze

Method

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line with parchment.
  2. In a large bowl, combine Stove Top Stuffing mix and milk. Stir gently and let soak for 5 minutes.
  3. Add ground beef, eggs, onion, ketchup, and black pepper to the soaked stuffing. Mix gently until just combined.
  4. Transfer mixture to the prepared pan and shape the top into a gentle dome.
  5. In a small bowl, stir together glaze ingredients: ½ cup ketchup, ¼ cup brown sugar, and 1 tablespoon yellow mustard.
  6. Bake uncovered for 45 minutes.
  7. Spread glaze over the top and sides. Bake 10–15 more minutes until internal temperature reaches 160°F.
  8. Rest in the pan for 10 minutes before slicing for maximum juiciness.

Notes

Let the meatloaf rest for 10 minutes before slicing to lock in juices. Use a meat thermometer for guaranteed perfect results at 160°F. Leftovers make fantastic sandwiches the next day.
