Ingredients

  • 1 large sweet potato, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp red curry paste (fish sauce-free)
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1 small onion, chopped
  • 1 cup spinach or kale, chopped
  • Salt to taste
  • Fresh cilantro or parsley for garnish
  • Cooked jasmine rice or cauliflower rice for serving

Method

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tsp olive oil and roast for 25 minutes, until tender.
  2. Heat remaining oil in a large pan over medium heat. Sauté garlic, ginger, curry paste, turmeric, and cumin for 1 minute.
  3. Add chopped onion and cook until translucent (5-7 minutes). Stir in roasted sweet potatoes, chickpeas, and coconut milk.
  4. Bring to simmer, reduce heat, and cook for 20-25 minutes until sweet potatoes break down slightly and mixture thickens.
  5. Fold in fresh spinach and cook until just wilted. Season with salt.
  6. Serve over jasmine rice or cauliflower rice, garnished with cilantro.

Notes

For low-carb/keto version: Replace sweet potatoes with 1 head cauliflower cut into florets or 2 daikon radishes.
Use canned chickpeas for convenience, or substitute with 1 cup cooked hemp seeds for higher protein.
Coconut milk can be reduced for a thicker sauce if preferred.
Store leftovers in an airtight container in the fridge for up to 4 days.
