Method
- Preheat oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, toss the chicken thighs with olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper until evenly coated.
- Arrange the seasoned chicken thighs in a single layer in a baking dish.
- Bake for 20 minutes.
- While the chicken is baking, whisk together the heavy cream, chicken broth, and Parmesan cheese in a small bowl to form the sauce.
- After 20 minutes, carefully pour the cream mixture over and around the chicken thighs in the baking dish.
- Return the dish to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the sauce has thickened and is slightly golden.
- Garnish with fresh parsley before serving.
Notes
For a richer sauce, you can add a tablespoon of cream cheese or a pinch of xanthan gum (if strictly keto) to the sauce mixture. Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
