Ingredients

  • 1 cup warm whole milk
  • 1/2 cup granulated sugar
  • 2 1/4 tsp instant yeast
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 large egg, room temperature
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Method

  1. Whisk warm milk, sugar, and yeast together in a bowl and let bloom for 5 minutes.
  2. In a large bowl, combine flour, salt, and egg with the yeast mixture until a smooth dough forms.
  3. Cover the dough and let it rise in a warm, draft-free spot for 1 hour until doubled in size.
  4. Roll the dough into a large rectangle on a floured surface.
  5. Spread 1/2 cup softened butter over the dough and sprinkle evenly with brown sugar and cinnamon.
  6. Tightly roll the dough into a log and cut into equal pieces using unflavored dental floss.
  7. Place rolls in a baking dish, cover, and let rise for a second time for 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake rolls for 20-25 minutes until golden brown.
  9. Whisk cream cheese, butter, powdered sugar, and vanilla until smooth and frost the rolls while warm.

Notes

To make ahead, prepare through the second rise, cover tightly, and refrigerate overnight. Let sit at room temperature for 30 minutes before baking the next morning. Use unflavored dental floss for clean cuts without squashing the dough layers.
