Ingredients

  • 1 (5 lb) whole chicken
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 lemon, halved
  • 4 sprigs fresh thyme
  • 1 large onion, cut into wedges
  • 2 large carrots, chopped
  • 2 stalks celery, chopped

Method

  1. Preheat your oven to 425°F (220°C).
  2. Remove the chicken from the refrigerator 30 minutes before roasting to reach room temperature.
  3. Pat the chicken skin completely dry with paper towels for maximum crispiness.
  4. In a small bowl, mix olive oil, salt, pepper, Italian seasoning, and garlic powder.
  5. Rub the oil mixture thoroughly over the entire chicken, including under the wings and legs.
  6. Stuff the cavity with the lemon halves and fresh thyme sprigs.
  7. Place the onion, carrots, and celery in the bottom of a roasting pan to create a bed for the chicken.
  8. Place the chicken breast-side up on top of the vegetables.
  9. Roast for 60 to 75 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  10. Let the chicken rest for at least 15 minutes before carving to lock in the juices.

Notes

Always use a meat thermometer to ensure the chicken is cooked through. If the skin is browning too quickly, loosely tent the breast area with aluminum foil. This recipe is naturally keto and gluten-free.
