Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1/2 cup Greek yogurt (non-fat)
  • 1/4 cup sour cream (halal)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp smoked paprika
  • 1/2 cup crumbled sharp cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup minced fresh parsley
  • 1/2 cup halal-style grilled beef strips (or turkey alternative)
  • Salt to taste
  • Black pepper to taste

Method

  1. Bring a large pot of salted water to boil. Add cubed potatoes and cook until just tender but still firm (10–12 minutes). Drain and cool completely in refrigerator.
  2. While potatoes cool, whisk Greek yogurt, sour cream, apple cider vinegar, Dijon mustard, minced garlic, smoked paprika, salt, and pepper into a creamy dressing.
  3. Toss cooled potatoes in olive oil and gently mix in dressing.
  4. Fold in cheddar cheese, green onions, parsley, and halal beef strips until evenly distributed.
  5. Chill salad for at least 1 hour before serving to enhance texture and flavour development.

Notes

For resistant starch, ensure cooled potatoes are not mashed
Substitute feta cheese for cheddar if needed
Use cooked lentils as a meat-free beef alternative
