Ingredients

  • 1 can (15 oz) 100% pure pumpkin puree
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, eggs, pumpkin pie spice, salt, and vanilla extract until smooth.
  3. Gradually whisk in the heavy cream until the custard base is well incorporated and glossy.
  4. Pour the pumpkin mixture into the prepared baking dish.
  5. In a separate medium bowl, combine the flour, oats, brown sugar, and ground cinnamon.
  6. Pour the melted butter over the dry streusel mixture and stir with a fork until crumbly.
  7. Evenly sprinkle the streusel topping over the pumpkin custard.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the edges of the pumpkin custard are set but still have a slight wobble.
  9. Allow to cool for 15 minutes before serving warm.

Notes

Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream. Store any leftovers in the refrigerator for up to 3 days and reheat in the oven or microwave before serving to restore the texture.
