Ingredients

  • 1 1/4 lb center-cut salmon fillets (skin-on or skinless)
  • 3 tablespoons packed light brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1 ripe mango (2 cups diced)
  • 1 cup baby tomatoes (cherry or grape), halved
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • Pinch of salt (for balance)

Method

  1. Bring salmon to room temperature for 15 minutes. Pat dry with paper towels.
  2. In a small bowl, mix brown sugar, cumin, coriander, chili powder, and 1 teaspoon salt.
  3. Rub spice mixture evenly over both sides of salmon fillets.
  4. Preheat oven to 375°F (190°C). Place salmon on parchment-lined baking sheet. Bake for 15-18 minutes until flaky but moist.
  5. While baking, prepare salsa: In a bowl, combine diced mango, tomatoes, red onion, jalapeño, and cilantro. Toss with lime juice and a pinch of salt.
  6. Serve warm salmon immediately with fresh mango salsa on top.

Notes

Use center-cut salmon for consistent cooking. For extra moisture, add an avocado slice to each serving. To enhance spice: leave 1-2 jalapeño seeds in the salsa. Store leftovers in an airtight container for up to 2 days.
